A new week begins with a new recipe! What if we try to combine some flavors? I made a broccoli and scallops pasta dish with a light béchamel sauce and a touch of limey brown butter. Doesn’t it sound delicious already? You get the warmness and thickness of the pasta with the béchamel sauce, combined with the freshness of the broccoli, lime and scallops. Yuuum! Dinner for two? Yes, please!
Ingredients:– 250 g pasta packet (the one of your preference) – 1 small broccoli – 1 large white onion – 100 g of butter (approx) – 1 Tbs flour – 1/2 cup milk – 1/2 cup of water – 2 limes – salt and pepper to taste – scallops (think about how many you would like to serve in each plate – I used about 7)
1. Fill a medium size pot with water and let it boil. Once it is boiling ad a little bit of salt and a drizzle of oil to the water. Add the pasta of your choice together with the broccoli and let them cook until they are al dente. Rinse when it is ready. Meanwhile, chop the onion and have it ready.
2. Heat a pan and melt about 3 tablespoons of butter and start frying the onions. Add 1 tablespoon flour and stir immediately to form a paste. Let it cook over medium heat for about 6 minutes. Heat the milk a little (if the milk is warm everything is going to mix better) and add it slowly, always stirring to avoid the lumps. Lower the heat and keep cooking for another 6 minutes. Then, add the water, little by little as needed to create a lighter bechamel. Set aside and add the salt and pepper to taste. I normally add nutmeg here as well, but since I actually want it to have a limey flavor I didn’t do it this time.
3. By now, you should have already rinsed the broccoli and pasta, and you are ready to mix it with the sauce you just made. The only thing left to be made are the scallops. First of all, dry them on a paper sheet – they will brown better. Then, heat a pan and melt about 3 tablespoons of butter (you can add more depending on the amount you want), place the scallops in the pan and let them brown over low heat. Watch the butter carefully, whisking it frequently. When you see it starts browning and the scallops look pretty much ready add the lime juice, set aside and stir one last time.
4. Serve the scallops on top of the pasta and drizzle the lime butter on top of it, and DONE! You have a beautiful and exquisite meal for two!
